Sweet and Spicy Island Flavours

6 Chicken Thighs, Boneless, Skin On or Off
Salt & Pepper to Taste
¼1/4 Cup Tortuga Gourmet Red Pepper 60 ml
2 Tsp. Liquid Honey 10 ml
1 Tsp. Dijon Mustard 5 ml
Preheat oven to 425ºF (220ºC). Line a 9 x 13” (23 x 33
cm) baking dish with foil. Salt and pepper chicken and
place in a dish. Combine jelly, honey, and mustard and
spread over chicken. For best results, marinate chicken
in the fridge for several hours . Bake for 30 minutes,
uncovered or BBQ. Baste at least once during cooking.
For variety, add some fresh ginger and try it on pork loin.
Serve over rice,
